Oh my goodness - so much has been happening! And right now I should be putting away my laundry or doing some dishes, but I am dedicated to writing this post. Also, I hate putting away laundry and doing dishes.
Yoga. Easter. Kittens. Family. CSA. Cookies. His & Hers donuts. Toms. Chipotle. Oil change. Thug Kitchen. And so on and so forth. The best way to keep up with it all would be to look at my instagram or hack into my iMessages. (Please don't do the latter.)
What I am going to write today, however, is going to be about cookies. The Perfect Single Serving Cookies (for eating two or sharing). Here we go!
I was having a dilemma the other day after work. Should I:
a. go to yoga
b. take a nap
c. eat a cookie
What I really wanted was both b and c, but I convinced myself that I wanted c more and if I was going to eat a cookie, then I needed to go to yoga. So, a and c. Then the dilemma of, do I bake an entire batch of cookies or buy a cookie? Never fear! Pinterest to the rescue! This recipe caught my eye and here is my rendition of it:
Ingredients:
2 tablespoons (about halfway melted) butter
2 firmly packed tablespoons light brown sugar
1 tablespoon of white sugar
A pinch of salt
1/4 teaspoon pure vanilla extract (don't skimp)
1 egg yolk (I don't care what you do with the white)
1/4 teaspoon of baking soda
1/4 ish cup of All-Purpose flour (ish means more in this case)
3 heaping tablespoons of dark chocolate chips
1. In a cereal sized bowl, mix butter and sugars. (I used a fork.)
2. Add egg yolk and vanilla. Mix again.
3. Add the salt, baking soda and flour. Mix. If your dough seems runny, add a wee bit of flour.
4. Stir in those yummy dark chocolate morsels.
5. Form two cookie dough mounds on a baking sheet. (My dough was too sticky for rolling into balls.) And make sure they are several inches apart because are cookies are going to be sizable!
6. Bake for about 12 minutes at 350 degrees. Until they are nice and golden all over.
7. Remove baking sheet. Give it a nice little drop on the counter to deflate the cookies. Let cool.
8. Enjoy!
We made these two nights in a row because they were so simple and SO DELICIOUS. And then there's no guilt involved because you ate a dozen freshly baked cookies because you only have two. (Crisis averted!)

Hey Interwebs!
It's certainly not that I haven't been thinking about you these past three days. I've thought about this blog every.single.day. I just haven't had the time to sit down and type. And that's ok.
Everyday, I went to work at 7am. Everyday, I left somewhere between 4 and 5. Everyday, I went to yoga. Well, Wednesday, I cleaned and put away laundry and went for the best shopping experience ever at Earthfare before visiting some friends to retrieve Brown Sugar Cinnamon Poptart ice cream and an antique sewing machine. Everyday, I've shared food and time with someone I love. Everyday, I've been in bed around 9pm.
It hasn't been crazy, but I've enjoyed every single day. Today and tomorrow are well planned, busy days, so I'm glad I had three good days to delight in.
My yoga teacher this afternoon encouraged us all to just let go of what we were thinking of - trying to guess what's next. She said, "I have my weekends well-planned by Monday afternoon. That robs me of being in the present because I'm always thinking of what's coming up." And I do the same thing. How do I stop that? Does lack of planning mean lack of productivity? Probably not. What would happen if I went a whole week without any planning? Oy. It's giving me anxiety just thinking about it!
We'll see.
Anyway, here are a few other things that have been on my radar.

It's always hard to go back to work on a Monday after two good days off, but today wasn't so bad. Not at all.
Outside of working 7-5, I've been sort of, well, lazy. I need to finish cleaning the kitchen, make tomorrow's lunch and put away laundry. Instead, I've been perusing Google Reader and Pinterest while watching Storage Wars. Have you ever watched that show? It's oddly addicting, but it seems like a lot of work to keep up with auctions, haul that junk and then resell it all. I hate keeping up with my own junk.
Speaking of my junk... Spring is here and I'm ready for some spring cleaning! Unfortunately, this constant sinus headache I've been experiencing really just makes me want to nap. I'm also ready for some spring baking - Pink Lemonade Cookies, anyone? And I'll be ordering some new, beautiful TOMS. Our CSA from Ambrose Farms starts on April 2. Spring is such an exciting time of year! It's a time for bright colors, health, freshness and newness!

Blogging is hard work. Kudos to everyone who posts daily and/or makes their living via their blog. I missed another day of my 100 days. I'll be honest, I don't feel guilty, but I do feel like I'm learning a lot about real life blogging. (Not the kind that forgets to post for months at a time...)
So, what was I doing if I wasn't blogging? Oh, well, I was in Savannah. Nbd - just visiting my dear, sweet friends - David and Faith and their kids. And the oh so enlightening Courtney and Andy. I would venture to say yesterday was both fantastically comfortable, but also a big look into what the future my hold. There was a lot of coffee and food and conversation. (We went to Starbucks, the Farmer's Market, Starland Cafe, Foxy Loxy and Green Truck!) There were also conversations about marriage, children, gardens and home ownership. Oh my, how the time flies! I suppose conversation about such things are what make us adults, yes?
That brings up an interesting topic - adulthood. When does one go from young adult to regular adult? How does one present themselves as old when their body is still young? Where does wisdom and maturity come into play and how big are their roles? I was recently told, "You don't look your age. You're nearly thirty and I'm sure you still get carded." Is thirty old? I was also told, in spite of professionalism, "You still come off as young." But then I've also been told, "I just assumed you were my age because of the way you carry yourself." How does one leverage youth and age together?
Just wondering.
Today was much different from yesterday. There wasn't much venturing out of the house. As a matter of fact, the only time we left was to go to brunch at Black Magic Cafe. (Not even the deluge of rain could keep me away from that pumpkin chai.) There was no yoga or running. There was a lot of lying around and sniffling of allergy noses. There was Game of Thrones - four episodes to be exact. Season 2 is over and I am anxiously awaiting the premiere of Season 3 next week!
There was also much time spent in the kitchen today - baking protein bars and cooking dinner. Have you all had pierogies? They are fast become a staple in this house. And, in between, there were toasted coconut mocha frappuccinos. Oh, my favorite kitchen activity today? Lunch. Avocado toast sprinkled with sea salt. So simple and delicious.
I think sometimes it's good to just stay in the house. If it's flooding outside, then it makes the decision easier.
It's close to bed time since 7am is work time. I suppose I'll say goodbye now.
I hope your weekend was less allergy-filled than mine, but just as full of friendship and food.

Shoot. I forgot yesterday. I turned off my blog alarm on Tuesday because it was going off at work and, well, the rest is history.
Yesterday was just a busy day. I spent most of it visiting various people: mom (we walked the bridge pictured over yonder), dad, boyfriend, doctor, mom (again!), sister, lots of friends. It was a good day. Of course, my room is a disaster, my laundry still isn't put away and I received by car taxes, but that's really neither here nor there.
Good news is - I have the weekend off! And I get to travel down to Savannah to see some of my very dear friends. It's going to rain, but that is ok. Rain is nothing coffee shops and Green Truck can't fix.
Does anybody have big weekend plans?
This morning at our morning meeting I shared my love of coconut with everyone. (Remember last post when I said I was currently obsessed? More like always obsessed.) Yesterday, I had two big coconut wins at (of all places) Walmart! I was finally able to get my grubby little paws on some of the new Chobani Flip! It is.... flippin' amazing! But seriously, Chobani has a product locator on their website and it helped me track down the Almond Loco Coco and the Key Lime Crumble. Enough about the Key Lime whatever - the Almond Loco Coco will blow your mind. Coconut flavored Greek yogurt with real coconut in it (on one side) and toasted almonds and dark chocolate chips to mix in (on the other side). I die. And, after I found that little gem, there was Coffee-Mate Coconut Creme. Are you kidding me?! Like a kid in the candy store. Maybe I bought 8 yogurts and a giant bottle of creamer. (And by maybe I mean I absolutely did.)
Summer is coming. Follow the coconut trail.
And, no, neither Coffee-Mate or Chobani endorsed me (although I'm certainly not opposed to the idea).
Well, enough about me and my obsessions. I'd love to hear from you all whether email, text, phone call or comment. I truly love to read you words as much as I hope you love to read mine!

Just another manic Monday...Today was a Monday like any other. I went to work at 7am and worked until 4ish. During those hours I counted things and rang out things and fixed issues as usual. I also was given the opportunity to practice my interviewee skills. That's not usual, but a wonderful experience.
After work, I finished watching the season finale of Girls on HBO. Oh goodness. I'm not sure how I feel about the way Lena had this season wrap up, but I have faith that it will come back strong in Season 3. Any Girls viewers in the crowd?
I headed to yoga for a sweaty flow workout. It was just what the doctor ordered after such a long weekend. And, when I got home, there was a huge mushroom and onion pizza from Andolini's waiting to greet me. How lucky am I?
Its been a laid back Monday which will be followed by what appears will be a very busy week. Yoga. Meeting new friends. Going to Savannah to see old friends. All good things. Busy, but good.
Hopefully, I will get through this week without a nervous breakdown like last week. Hopefully, by Thursday, I'll remember that's my day off because I keep telling people I work until 7. (Hello mind? Where did you go?)
The new Justin Timberlake album comes out tomorrow. Maybe I'm excited about that.
I'm probably going to finish Game of Thrones Season 2 this week. I'm definitely excited about that.
And everything else? Well, let's just wait and see what happens.

Sometimes days don't go exactly how you planned.
The beach isn't as beachy as you had hoped. You don't go see a movie, but instead crash a wedding reception. Your cardio changes from a leisurely walk to fast paced line dances.
I don't do well with rushing or last minute changes. It's something I've been battling my whole life. What I need to learn is, days may not got exactly how I plan, but days always end exactly how they should.
I'll get there one day.

I used to think I was a 75 year old trapped in a 27 year old body - just an old soul. However, now I know that my body is old, too. I started Couch 2 5k today. Let's just say running and I - we're not friends. And, here I am, in bed on a Friday night at 11:16pm wishing I had remembered to blog earlier so I could be asleep already. I'm just a 75 year old.A 75 year old eating ranch tortilla Pop Chips in bed right now.
Onto other things... I'm trying to teach the cat to eat treats out of my hand. As it turns out, she's not that smart. Also, we went to see Crowfield play their last show tonight at Charleston Music Hall. (They're still playing, actually. See first paragraph as to why I am at home.) They're fantastic, so I wish I had listened to them sooner. If you have Spotify, you can get most of their discography. Check them out!
Tomorrow is one of my days off for the week, so I'm quite excited to get that started. I see yoga, the beach, and Oz in my future. And Abita Strawberry Harvest Beer? Yes, please! If I'm really lucky, I'll get to watch some Game of Thrones. And (because I know I'm really lucky) I'll get to start my day back to work with breakfast at Black Magic on Sunday.
Life is so good.

It appears I skipped Day 21 and headed straight to Day 22.
Sometimes you just have to move forward quickly. (However, I promise to try not to forget days again.)
Every night at 8pm, the alarm sounds and "blog!" appears across my iPhone screen, so it's normally not a problem. As a matter of fact, it even happened last night, but I found myself wrists deep in pie dough. I kept hitting snooze, but ended up with pie all over my phone and by the end of it all, well, I forgot. But you know that already.
So pie. I baked Apple Hand Pies by mixing this recipe from Joy the Baker with this recipe from A Cozy Kitchen. And then I vented them with pi symbols because today was Pi Day! 3.14. Get it? I like any reason to celebrate with baked goods, but being irrational is one of the best! (Bahaha. Irrational. Get it?) Oh geez.

Tonight, when the alarm went off, I was in the middle of a more hands-off oven activity - roasting brussels sprouts. (Which I am currently eating with a fried egg on top.) I LOVE brussels sprouts. They may very well be my favorite vegetable. I'm weird, I know. But if clean them, cut the bottoms off, and quarter them. Then drizzle with a little olive oil and garlic. Crack some pepper if you like. Then put them in the oven at 400 degrees for about 25 minutes. I flip them in the middle and sprinkle crunchy sea salt over them. Voila! Yummy roasted brussels sprouts and then throw an egg on top for protein.
Now, I want Cookie Dough Coconut Milk Ice Cream. Don't mind if I do/Let me just undo all of the good from yoga tonight.
In other news, I'm devastated about the decline of Google Reader. If any of you use it, then you feel my pain.

Over the past couple of weeks, I've developed myself in a lot of different ways. There have been new yoga poses and classes. There have been relationships that reached different levels. There has been a lot of professional growth and stretching. Its the ebb and flow of life, right? At any given point in a day, in a year, in a life, we can be found in different spots. Just like the tide.
I feel like the tide is coming in right now. I feel like my life is filling up with all of these things and I'm trying to make sure nothing gets washed away in the process.
Tonight, I was given the opportunity to put away the professional and stretch my personal life - stretch my culinary life. Tonight, I baked. Well, yeah, I do that all the time, but this time it was bread! Brioche, Wheat Sourdough, Rosemary Focaccia, Scones, French Demi Baguettes. What the what? It was a class at Charleston Cooks that stretched my knowledge and skills in the kitchen. It was such a nice departure. I would go there every week if I thought I could fit it into my budget!
I highly recommend a visit to the store and a participation/demonstration class if you have the time while in Charleston.

I don't particularly feel like blogging today, so if you feel like you're not getting my best, then it's because you're not. I just spent the last hour reading about professional development, so I'm pretty tired of the whole reading and writing thing.

Today //Today was a Sunday off. They're my favorite.
Today, my favorite Folly Beach coffee shop went full service. (Eek!) It's still my favorite.
Today, I did power yoga with three lovely and powerful women I know.
Today, I spent hours looking at wedding dresses for a dear friend who has found the deepest kind of happiness in her life. She looked so beautiful!
Today, I spent time looking at my wedding Pinterest board. (Every little girl has one.)
Today, I drank my second kombucha. Habit forming.

Today, I chose positive, confident, contented, and complimentary instead.
Today, I filled my online shopping cart with three new pairs of Toms. These. These. And these.

I am trying to wait for my nails to dry and blog and bake (the perfect) tofu and watch Kourtney & Kim Take Miami. I started freezing the coconut milk for my Toasted Coconut Mocha Frappuccino but I haven't gotten around to making them. Maybe tomorrow? (Seriously, Starbucks, just go ahead and bring coconut back into the stores.)I started the Soul Detox devotional. It's been reminding to cast off words of negativity - the things that try to steal truth and bring me down. It's so easy to succumb to such things. I'm glad I have a reminder.
But if we look forward to something we don't yet have, we must wait patiently and confidently. And the Holy Spirit helps us in our weakness. For example, we don't know what God wants us to pray for. But the Holy Spirit prays for us with groanings that cannot be expressed in words. (Romans 8:25-26)
Have you all seen or read The Chalkboard? So many stories about health and beauty and style. And each month they have a guest editor. If you haven't checked it out yet, well, get going!
Also - anyone who lives in/loves Charleston needs to get into Charlie Mag. I get weekly updates from them about what (and who) is happening in this beautiful city. I've only been able to pick up a hard copy once, but I guess that means I'm just doing my part for the environment!
Now I need to figure out how to prep salads with not entirely dry nails. Hmm. Wish me luck!

As promised - a recipe for homemade protein bars! I made these tasty little treats yesterday and they seemed to be a hit today, so I feel like it's safe for me to share the recipe now. I'm not sure mine turned out quite a delicious as my friends did last week. She used dark brown sugar and I used light. Lesson learned.
makes about 20 bars
1 cup peanut butter
1/2 cup dark brown sugar
1/4 cup light agave syrup
1/2 cup unsweetened apple sauce
2 egg whites
1 1/4 cup wheat flour
1/2 tsp baking soda
2 tsp vanilla extract
3 cups old fashioned oats
1 cup dark chocolate chips
2 scoops chocolate protein powder
8 tbsp ground flax
1/2 cup chopped almonds
Preheat oven to 350 degrees.
Mix all ingredients together in a large bowl.
Spread and press mixture (evenly) onto a greased cookie sheet. Bake at 350 for 15 minutes. Allow pan to cool before cutting. Each bar has 10-12 grams of protein.
Enjoy! And pack extras if you take them anywhere outside of your kitchen. Your friends are going to want their own. Maybe two!
PS. Tomorrow I am going to tackle a homemade Toasted Coconut Mocha Frappuccino. It's all I wanted today and Starbucks probably won't have it until May. Wompity womp womp womp.

Yesterday was HARD. By the end of the day, all I could do was lie my little head down and close my eyes. That's why all you got was a photo. A photo, however, that is a sentiment to what I'm going to be doing. I'm gonna make it happen - whatever it ends up being.
Today was not so hard. Today was spent answering to no one for anything at any time. There was baking, cleaning, cooking, walking and watching - GAME OF THRONES! Ah. I'm so sucked into it. I watched two... three episodes already and I've promised myself another after dinner.
This is exactly the sort of day I needed.
As it turns out, life is full of pressure. Oddly enough, most of the pressure just comes from ourselves. Why do we do that?!
I've learned a lot about myself over the past 48 hours, too. It's all good. But I'm not perfect. And, in the end, it's not even all about me. I am not serving myself. I am not even serving this world. I must remember to filter my actions and "In a humble (gentle, modest) spirit, receive and welcome the Word which implanted and rooted [in your hearts] contains the power to save your souls." (James 1:21bAMP)

I think my life is about to be very busy. I know that's vague, but I have that feeling that you get at the top of the rollercoaster right before it drops - a great big mix of excitement and fear and nonstop-ness. (That's not a word, but I'm using it anyway.)

First world problems. No Irish Cream creamer for my Keurig brewed coffee.
I have a home - a lovely, strong and warm shelter. I have a kitchen full of food - including a fridge with vanilla creamer. (SHUT UP! I know.) I have clothes to guard me from the cold. I have a yoga pass to keep my body in check. I have wonderful, beautiful people who care about me in ways I've never even imagined before. People who make me feel safe and cared for and cherished.
But I pouted hard. And drank my coffee black.
How do we change our mindset? If I hold it in enough, will my view change? Do I acknowledge it and let it go? How do I embrace both the upset and the bounty?

I've been trying to be good about eating at home/eating what I have/not wasting food/having fresh & healthy foods. All of these combined make it so I have to frequently visit the grocery store frequently, plan my meals accordingly, and eat lots of weird odds & ends of fruits and vegetables at weird times so they don't waste.
Fruit is easy. I just throw that junk in a smoothie. Vegetables on the other hand.... Sometimes I add them to sauces or throw them on as toppings to soups or potatoes. Today, I realized I had a LOT of odds and ends. And some Italian dressing. And some lemon vinaigrette. And a box of whole wheat rotini. And a yearning for summer time and the food that accompanies it. Sounds like pasta salad to me.
I boiled up my pasta, threw in half a bag of frozen peas, a quarter bag of frozen corn, some cherry and roma tomatoes chopped up, purple onion, broccoli, sweet peppers, garlic salt and pepper, the two dressings, leftover three cheese Italian blend from Trader Joe's. Bam! Done. Meal is complete and the odds & ends have been rescued.
Now, it's getting nice and cold in the fridge.
The best part? It's pretty. I feel accomplished when I look at my meal and think it's got good color.
This is all just practice for my forthcoming CSA. You've got to be fluid and flexible when your food is coming from a farm and you have no idea what it is on a weekly basis.
Also, my friend made the MOST delicious homemade protein bars the other day. She gave me two and I wanted to gobble them both up at once but decided against it. I shared the second one, but plan on making my own soon. I'll report back.
Now I'm off to watch The Dark Knight Rises for the very first time. (I know. I know.)

You know your go-to recipe? The one you always have ingredients on hand for? It's the recipe you can whip up on a moment's notice to feed some unexpected guests or take to party to wow your friends.
My go-to recipe I stole. This is a recipe I got from my very best friend. He made it for me a few times and it's so simple that I made it for him one night as a surprise and BAM! now I make it all the time. So delish - I never get tired of it.
In a deep baking dish (preferably with a lid) layer (this is the order I put them into the dish, but I think it's really neither here nor there) the following ingredients:
- package of cream cheese (I use 1/3 less fat)
- can of well-rinsed low sodium black beans
- jasmine rice (I cook a 1/2 cup ahead of time)
- can of well-rinsed Rotel (tomatoes and diced chilis)
- 1/2 -1 cup of frozen corn
- can of vegetarian refried beans
- layer of pickled jalapeños
Then sprinkle the top with your choice of cheese. We recommend mexican, pepper jack or cheddar. Cover your dish and place in a 375 degree oven for 45 minutes - long enough for it to get ooey gooey with bubbly cheese on top.
I eat mine in a bowl with sour cream or avocado (if they're ripe) and salsa. You can eat it with chips or dig in with a fork. And, it's best accompanied by a Corona & lime.

I've been watching Game of Thrones (Season 3 starts at the end of this month). Or blog reading - today The Wunder Year that I first read about on Lululemon's blog. The idea of wear yoga pants every day for a year sounds both amazingly comfortable and terrifying (um, spandex in public??).

It appears as though the sun has retired for the day, so I won't be going back outside. It's chilly here. Also, it's pollen season aka Erin has to take Sudafed everyday season. C'est la vie.
I just read a recipe for Toasted Coconut Mocha Frappuccinos. Gimme.
It's the Food + Wine Festival this weekend. It makes me want things with truffle oil.
Speaking of delicious things. Today my foodie friends and I had a new specialty donut from our downtown donut shop, Glazed. It was Pear Blue Cheese Cabernet. Ohmygoodnessgracious. It's their finest work yet. Although, I am still trying to get my hands on the Strawberry Champagne selection. Mmmm. (Photo Credit: Gabe!)
ANYWAY.
This morning I got up and made French Toast, (vegetarian) bacon, and coffee for breakfast. I've been to yoga, downtown, and two grocery stores today. I cleaned my ktichen and bathroom and have started on dinner. I swept my porch and watered my plants. Now, I need to hop in the shower and clean up my room - change sheets, dust, the usual.
Then relax. Read a book/some blogs. Watch a Game of Thrones. And go to bed early so I can get up early to have Sunday Brunch before work.
That's my weekend plan. How about you all? What have you been up to?
And hey - does anyone else visit multiple grocery stores in one day? Today it was Trader Joe's and Publix. Sometimes I throw in Harris Teeter and Whole Foods. But its rarely just one. Maybe I'm a nut.
I find my days off go to quickly and are often filled with things to get done rather than any sort of relaxing. I think that's how it is for everyone though. I think remembering to be thankful for the simple things is what will get us through.
PS. In the middle of this blog I got distracted by the newest episode of New Girl on Hulu. I guess that's the sort of thing that can happen on days off!

Tgif.
After two busy work days, I'm glad it's Friday. And I'm happy to have Saturday off.
Work. Yoga. Happy hour with tacos & beer. What more could a girl want?
I went to a new restaurant tonight. Mex 1 Coastal Cantina in West Ashley. That place was hoppin! Our waitress was great. The chips and salsa were great. The happy hour specials were pleasing. It was a great experience, but I would certainly suggest getting there early for a table - even to grab a seat at the bar!
Now I'm home with wine and Gilmore Girls. I ask again - what more could a girl want?
Probably scones. I think I'll bake them tomorrow. Coconut scones.... Yesss.
I'm excited about sleeping in, drinking coffee, doing yoga, grocery shopping and watching Game of Thrones. I suppose I'll clean my bathroom, too. Meh. You have to do something responsible on your days off.

Today, I went to work and left with the full intention of buying a new television when I left. (Decidedly, Game of Thrones would be much better viewed on a 39" Magnavox than on my 13" Macbook Air.) However, Target had other plans for me. SOLD OUT. Womp. I wandered around purchasing necessities like bobby pins and toothpaste while throwing in some impulse purchases like easter candy and a lavender candle. (I don't live near Target anymore, so this doesn't happen often. Promise.)
I was feeling a little dejected on my way back to James Island. I even looked at a few TVs online when I got home. (While eating the somewhat average frozen yogurt my freezer "helped" me produce last night. Try try again.) Since, I knew I was going to have to consult my consultants before choosing a new TV, I walked away and decided to give my evening a boost. Here we go. Pictures included.
And, finally, I did a little Pinterest work. I placed a magnet strip along the shelf in my bathroom, covered it in washi tape and made it the new home for my bobby pins. Hopefully now I will always have one when I need it!
My dejected late afternoon has turned into something productive and delicious and it's finally time for Game of Thrones.
And I don't even mind that it's on my Macbook Air.

I was feeling a little dejected on my way back to James Island. I even looked at a few TVs online when I got home. (While eating the somewhat average frozen yogurt my freezer "helped" me produce last night. Try try again.) Since, I knew I was going to have to consult my consultants before choosing a new TV, I walked away and decided to give my evening a boost. Here we go. Pictures included.
I practiced my yoga headstand! It was a success. My skills with TimerCam were a smidge less successful, so this is as good as the documentation gets. Also, here are 10 Reasons to Do a Headstand Everyday.
I was hungry after all the shopping and head standing, so I made myself some baked onion rings and roasted asparagus for dinner. Lightly sprayed with coconut oil and sprinkled with crunchy sea salt and garlic pepper. I outdid myself.
And since no American meal is complete without dessert, I got started on these Cadbury Mini Egg Blondies. I didn't actually eat one yet, but I know it's going to be more amazing and fattening than I can even imagine. Easter candy baked goods. Nom. Maybe that's why it's my second favorite holiday.

The rain finally let up today and I could see the sun come shining through the clouds.
Isn't that how life can be?
I wouldn't call today the best day. There was a lot of rain. There were also a lot of hiccups at work. Nothing too overwhelming, but I got to come home to a lovely dinner and my first foray into ice cream making on my own. Enter Coconut Vanilla Frozen Yogurt. Unfortunately, it's still freezing. Yogurt is a breakfast food, right? I'll put raspberries on top. Those are healthy for sure.
Today, I also learned what HBO stands for - Home Box Office. Who knew? Everyone, but me. That's ok. I've been keeping up with it's show GIRLS. Lena Dunham is quite the talented lady - writer, director, actress. She's also the cover of Rolling Stone. (Finally! I've been getting a free subscription for a year and this is the only issue I've been interested in reading.) And, speaking of HBO, I watched my first episode of Game of Thrones tonight. I can tell it's going to be something I continue to watch despite the foul ending of this particular episode.

You know what I love? Fresh flowers. I was just thinking about them earlier. I'm happy I have my little orchid in the window.
You know what else I love? The kitten that lives on our carport. Her name is Snickers and she's so adorable that I often want to scoop her up and bring her inside to cuddle with me. That's sort of like saying I often want to stop breathing from a sudden allergy attack. Such is life.
Sometimes I wonder if we're looking at life wrong. (Certainly we are as a majority.) So much focus on work and money, but are these things that truly make us happy? Are we happy because money brings us a certain level of comfort? I wonder if we could get away with less of the work and the money and still have the same amount of happiness. That idea could lead to quite the paradigm shift.
That's a good word. Paradigm. You know what is another good word? Synergy. I think the first time I read these words was in the book 7 Habits of Highly Effective Teens. (I was a very motivated, self helped youngster.)
Funny how I ended up here - in this blog post (in the smallest sense of the thought).
I think that means I've come full circle for now.

Today has been lovely so far.This morning we went to Black Magic for Break Fast Breakfast! I had egg whites with tomatoes, mushrooms, spinach and feta. AND a pumpkin chai made with almond milk. It was so delicious. Of course, it was followed by a walk down the pier to talk to strangers and watch the waves.
After, there was garden supply shopping. Cilantro. Lavender. A mini orchid. And so many seeds! I am going to make my thumbs green if it's the last thing I do!
Then I went grocery shopping! It's been awhile and I spent a lot of money! I bought practically everything in the produce section. And treats for the cat (Snickers) who lives outside - I got her to eat one straight out of my hand! When I finally got done putting away all of my purchases, I made a DELICIOUS smoothie - strawberries, blueberries, peaches, bananas, cranberry juice, spinach and vanilla yogurt. And while I was sippin on that, I whipped up a batch of Whiskey Walnut Blondies for the brother.
And this where you find me now. In between dirty dishes and episodes of Gilmore Girls. Before yoga class and before my work meeting this evening.
I'm not sad my juice cleanse is over, but I'm glad I did it. I feel lighter and like it was a good restart. My body is still trying to figure out everything I put into it today, so I'm being careful, but I'm ready to start cooking! (Who thought three days would feel this long??) I'm going to make all sorts of nonsense this week - sweet potatoes, burrito bowls, avocado & corn salad, brussels sprouts, and there is going to be RAINBOW carrots with hummus. Ooooh - maybe this Farmer's Market Skillet! I'm so thrilled about food!
Well, that's all I have for now. I'm going to make my way back to the kitchen to clean up! And then outside to sweep my porch. Such a domestic goddess today... What are you all up to this weekend??

Last night, I saw Silver Linings Playbook and I LOVED it. Please do yourself a favor if you haven't seen it yet.Today is my final day of juice cleansing. I hate it less today. I also ate a handful of almonds. I don't feel bad about it. I'm so ready to be eating again though. I think that I'll definitely be thinking more about what I put into my body after this. I don't believe in forbidding food groups, but everything in moderation.
I have today off from work. It's been raining all.day.long. James Island turns into a lake when it rains this much. So, how does one spend a rainy day off? I went to yoga, cleaned, read a few pages in my new book (The Fault in our Stars), visited with the brother, and watched reruns of Kourtney & Kim take Miami. Don't judge me. I got a lot done today - I deserve trashy tv shows. And tonight, I'm going to bake with a friend. No, I won't eat the cookies, but I will tomorrow. Hooray!
My life is good. My life is calm. And I like it this way.
(This just in - Kim is drinking Pressed Juicery juice on the show. I'm just saying.)
Also, I had a dream last night that I went back to San Diego. I was visiting my lovely Megan, drinking coffee in the sun, eating fish tacos and tanning on the West Coast beaches. I need to go back.
I also need coffee, sun, fish tacos and the beach. I NEED SUMMER! Haha. I'm a desperate woman.
Oh hey, I'm going to learn run again. Glo Run in May! Yay!

I hate juice cleansing. I miss chewing and things that have salt. I don't remember hating this last time I did it, but I've been informed that I did. Note to self: Don't do this again.Yesterday my juice didn't come until 1pm because the company accidentally used the wrong address. I tried to patiently sip on hot water with lemon until I ran out to greet the FedEx man. Literally, I was waiting on the porch for him.
I immediately ripped open the box and started guzzling a bottle labeled "1".
Juice 1 is a Green Drink consisting of kale, spinach, romaine, parsley, cucumber, celery, apple and lemon. I was satisfied.
I got all of my bottles put away in the fridge and went about my day and the rest of my juices.
Juice 2 is a Citrus Drink consisting of grapefruit and mint. That's all. I love it. Tart, but refreshing!
Juice 3 is a Roots Drink. I feel like that says enough, but I'll tell you the junk is made of carrots, apple and ginger. I abhor ginger and this drink.
Juice 4 is another Citrus Drink. It's a blend of pineapple, apple, lemon and mint. It's good, but very sweet. Yesterday I drank it straight up, but today I mixed it with water to cut it a little bit.
Juice 5 is a repeat of Juice 1. Liquid salad. Thinking of it that way makes it difficult to stomach. I'll try not to do that tomorrow.
Juice 6 is the savior! Ah! Vanilla Almond Milk. This delight is made of almonds, dates, vanilla bean and filtered water. I add about 1/8 tsp of cinnamon to it and shake it all up. This is my favorite. I wish I had tried the chocolate one now because it's sort of like a healthy and delicious melted milkshake.
Mmmm. Milkshake.
Anyway, in addition to these 6 juices, I have Chlorophyll Water and Aloe Water. Chlorophyll water is to keep you extra hydrated. (Because six bottles of liquid is not enough.) Also, it tastes faintly of grass. The Aloe Water is to, um, keep you moving. It tastes like cucumber water.
Yesterday, I gave away Juice 5 since I had begun so late in the day. Today, I'm drinking Juice 6 before Juice 5 because I'm dying for some substantial.
So, what is the lesson I've learned from all this? When you go on a cruise, don't have hourly ice cream and don't visit the pizza bar.
That's certainly not to say I only did this cleanse because I felt bad after a week of vacation eating habits. Cleanses are an excellent way to reset your body and mind. Also, I've spent a lot of time trying to decide if I should go back to my vegetarian ways. I've done a lot of learning about vegan cooking. I'm reading Animal, Vegetable, Miracle and articles like Carnivorous Vegetarian to try and figure out the healthiest and tastiest way to eat. I want both.
Although, right now, I would settle for anything that involved chewing.
But if you all have thoughts on the matter, then I would love to hear them. Right now, I'm going to take a little nap and then go see Silver Linings Playbook with one of my loveliest friends.

It's that time of year again. Spring is coming! It's time to get out of the winter funk and into the summer fun. I'm a little more on board with the idea because I just came back from Florida & a cruise, but I promise - it's coming. (The groundhog didn't see his shadow, so it must be true!)It's also that time of year where I do a crazy things like only drink juice for 3 days. Eh? Right. So, my Pressed Juicery 3 Day Cleanse should be arriving shortly. 3 Days. 18 Bottles of Juice. Lots of yoga. This should all amount to a healthier and happier, post-cruise Erin. (Because you can't really say no to 24 hour pizza and ice cream.)
Internal spring cleaning leads to external spring cleaning. And all sorts of cleaning usually leads to new ideas, crafts and resolutions. Maybe spring is the new New Year? Probably not, but I will tell you spring is my best time of year. I'm excited to see what it holds. The people in my life are very motivating, too. I'm sure they're going to make 2013 the best spring/year yet!
Speaking of motivating ideas, my friend Mandy is doing 100 Days of Blogging as a challenge for her creative juices. I've decided I would also like to take part in a challenge such as this. Why? My blog is something so dear to me that I've let fall by the wayside. I'm hoping this challenge will jumpstart me back into it. It doesn't have to be big or incredibly insightful. I just have to post. Consider this Day 1.
Well, now I have to start cleaning. I have quite the to-do list today:

In 2008, this happened. Worth noting: 2008 was the WORST. For everyone. I don't need to go into details, but I know all of my friends agree. So, I'm not saying that Olivia was a mistake because I loved her dearly. However, I put A LOT of money into her: clutch, catalytic converter, timing belt, ac. At this point she needed even more: head gasket, mirror, reverse light wiring, right blinker wiring, some sort of air filtery thing, brakes, two new tires. I just wasn't able to provide for her in her old age. I had to let her go.
What's a girl to do?
Cry a little. Spend a little. Get angry. Buy a new Prius C. (The C stands for Clearly. Just kidding. It stands for Cute. Still kidding. It actually stands for City.)
Yep. I bought my first BRAND NEW CAR. I affectionately refer to her as Lady Grey at the moment. She gets a lovely 53-60 mpg. She has a sexy magnetic grey teflon coating, too. It's a weird experience to drive a hybrid, but it makes me feel oh so economical and environmental.
Let's talk about what happens when you buy a brand new car. You have to haggle. I was able to do much less haggling since USAA had done part of it on my behalf, but let me tell you - it's hard to not back down and say let me have my shiny toy now, please. Also, it takes FOREVER. I got there about 10:45 and drove away with Lady Grey around 2:30. I had not properly nourished my body for that. I wasn't thinking straight. Luckily, the dealership is right next to Chipotle. Thank heavens!
So. Yep. I have a new car and a new car payment, but I also have peace of mind. No broken things that aren't under warranty (4 years and 60,000 miles are covered). All of the lights work. No control panel beeping and flashing. The anxiety of a dying car far outweighs the anxiety of a new car payment.
*sigh of relief*
Do any of you drive a Prius? I'm so happy to be a part of the Prius family now. I notice them everywhere I go!
(And never fear! Floyd - my fearless pink flamingo - who has been with me since the Pontiac station wagon has found a new home in the Prius C!)

I'm drinking coffee, burning a mahogany teakwood candle, and waiting for the Sears delivery truck.
Sears delivery?! Um yes. For my dad's birthday/Christmas (because he doesn't like us buying things for him at all), he is getting a new mattress! My brother and I decided that 27+ years was too long to have the same mattress, so on Black Friday I made sure to catch a good deal and pay for the delivery. It's a big day.
Also, buying things like mattresses as gifts for the people I love makes me feel like an adult. A mattress is a very adult thing to buy - don't you think?
You know what else is very adult? Budgeting and buying a new car. I'm learning how to do both of these things, too. I just got off the phone with the Toyota dealership - I'm going Friday to test drive a Prius C.
I am so adult right now. Wish me luck!

Today has been such a blessing away from people - away from my head.

I'm not excited about going back to the real world, but I've got all sorts of good on my side.
My tree is up! The holidays are in full swing! Please don't remind me that it's less than a month (and one paycheck) until Christmas. I will cry. Again. Because I've certainly cried a few times already in the last two weeks.
People often go around saying "when it rains, it pours" but you don't really understand what that means until it happens to you. Because WHEN IT RAINS, IT POURS. And a lot of the raining and pouring is the anxiety that comes from all the other raining and pouring, but boy oh boy. It is tough.
The holidays are my very favorite time of year. They are full of surprises, gifts, crafting, baking, drinking(!) and cheer. And stress. Work stress. Dating stress. Family stress. Financial stress. My car is breaking stress. I need to get my teeth cleaned stress. I need to workout stress. What do I buy stress. How many days do I have to work in a row stress. Stop asking me questions stress. People are getting sick stress. How the eff do you expect me to craft that stress.
Because when it rains it pours.
So, what I'm trying to do is... Put less stress on myself. I mean HELLO it's coming from all over the place as it is - just give yourself a break! Am I right?
I am. I know I am.
So, it's a day off today where I'm running around - errands, appointments, crafting, baking, trying not to blame myself for the rest of the things sitting on my list. LET IT GO. Hmph.
I forgot to buy glitter today.
The good news is that it will all be over soon (which is sad because this is the time of year you're supposed to slow down and enjoy time with your loved ones). The good news is that you'll get it all taken care of (in due time). The good news is when you feel you're starting to slump there's always coffee.
Two pots a day is not too much.
The best news is that while you're crafting/gifting/baking you can make this Killer Granola from Shutterbean!
I mean, seriously, double the recipe. Triple it if you want to use it as a gift. Add Cinnamon. It's delicious. Pour soy milk and blueberries over it. Mix it with raspberry preserves and plain greek yogurt. It's amazing!
And if the granola fails (which is won't) then do what I do and make a nice hot chocolate with peppermint schnapps, grab a book (Currently reading: The Night Circus) and turn off your internet/mobile devices.

It's raining here. And, as much as I dislike the rain, lying in bed listening to it hit the roof and the trees has such a calming effect. It could be that I'm still in bed that's so calming, but I'll let the weather win this one.
I have to go to work soon, but if I didn't, I'd stay all day in bed - reading a book or watching Harry Potter while drinking hot tea. Ahhh.

It has certainly been awhile since I've blogged. This morning I read a little over 100 posts and decided that I should post my own - you all are so inspiring!
So, what's up party peeps?
I'm currently in the middle of a weeklong vacation. I spent four days out of town. Today will be spent with one of my very best friends watching Gilmore Girls and eating cheap Chinese food to celebrate her birthday! And then I have A VERY LONG TO DO LIST.

Dentist Appointment
Bare Minerals/Finish Line/Tanger Visit
Grocery Shopping - because I cannot live on oatmeal alone.
Change all the light bulbs in my car that are burnt out
See about fixing my driver side window

Get car washed. Inside & out.
That's just a bit. A bit of what needs attention. I'll get it done. Fo sho.
Anywho. That's life. A very long list of things to do. And, if you're very lucky, then it's accompanied by some fantastic people. Sometimes you'll cry. (I've done that a lot recently.) Sometimes you'll be smile. (I've done that a lot recently, too.) And both of these things are good. It's all perspective, I suppose.
Enough of this. I have a to-do list to take care of.

I will GO TO YOGA on Thursday & Saturday. And it will make me feel AMAZING and accomplished.
(I'm writing this here, so it's public and I can't back out. It's a mind game.)
At the beginning of the year, I was going to yoga probably three times a week. I loved it so much that I wrote a blog post about it. I am in a totally different place than I was then. My worry & stress levels aren't the same. I have new people in my life who like to support me through that. I have different work and life responsibilities. But I want my yoga back. I also want my sexy arms back.
It's a win for everyone.

It's been awhile since I read something that truly inspired me. Weird because I read a lot. Magazines. Books. Blogs. They've all taken me so far and then dropped me off on the corner. The book I just read truly inspired me though. All the way.Blogger Alyssa Shelasky (Apron Anxiety) is living the life I've only dreamt of - foodie writer in the city that never sleeps. In all honesty, it's not the life I see myself living, but it's one that I can fall deeply into and I can somewhat replicate while still living my own version of life. After finishing this book, my iPhone now holds a laundry list of ingredients to buy and photos of recipes I snapped straight out of it's pages. And first things first - when I get home, I'm baking muffins. Whole Wheat Flour. Butter. Blueberries. Raspberries. Muffins that would get me out of the worst of trouble - like a wrecked car. Maybe muffins will be how I make all of my future friends. Perhaps I'll never open my own bakery or become a professional blogger, but I will make sure that my friends and family are well fed and that my words are not lost on deaf ears, but ferociously typed onto the interwebs for memorializing.
So, now what? I need an Action Plan! Some SMART GOALS. Dear Readers, where do I begin? Where do I go from here? What are some of your favorite recipes? What are some of your favorite foodie books or blogs?

I moved about a month ago and I'm still not unpacked. I'm not settled in. I'm rarely home. I live around boxes. I haven't really blogged. I haven't really baked. I have a running to-do list that I ignore. I haven't even put away my laundry.
Little Suzy Homemaker is going through a rebellious stage, I guess.
I did start reading blogs again - they're starting to inspire me! I did start organizing my finances - I'm trying to learn to be frugal where needs should be frugal! I did get back into my book Apron Anxiety - it's sort of what I'm going through now and she's about to start her upswing!
Hopefully, it's a sign.

I've recently discovered Living Social and Kayak.
I'm obsessed.
Yes, I want to go on a Yoga + Wine Tasting Adventure! Who doesn't? And it's in another state? Ok! That sounds way fancier than warm flow + a bottle of two buck chuck. (No offense, TJ's. You know I love you.)
Maybe I'll go to the Grand Canyon. Or Seattle. I could always visit friends in New York or Boston.
I am beginning a few projects. In my head.
One is painting a fridge.
One is hanging up wall decoration in my house.
One involves baking.
One involves work and learning to develop myself.

Hi Friends!
It's been awhile since I had that blogger's itch. Maybe I've been preoccupied. Maybe I've had blogger's block. Maybe I've had life block. Or maybe I've just been settling into what my life has become. (And for the record, my life is lovely.)
I can say a lot has happened since I last posted here. I've been seeing a lot of some people and less of others. I've not been baking too much, but I have plans to change that... starting today! I don't live in the same place, but the place I live is pretty and terribly convenient (except to a Target). I lost a family member, but gained more respect for the family I have. I'm another year older... and I have no buts about that. It is what it is and I like growing older. But I'm still young at heart. (Oh! There is the but. Cue the Frank Sinatra.)
I am currently typing to you via my new Macbook Air. It's love. I'm sipping EmergenC to fight this plague that floats around me. And I'm getting ready to travel down to the beach for breakfast.
Oh, this life.
Certainly more to come soon.
